Feral Huevos Rancheros

I'm leaving the amounts of ingredients a little vague to facilitate making more or fewer servings as you wish - it's kind of an eyeball thing, anyway. If you're making huevos for two people, use about 1/4 to 1/2 the tube of Soyrizo, 4 eggs, 1/4 to 1/2 cup of salsa, 4 tortillas, and about 2 whole roasted Hatch chiles, coarsely chopped.

Soyrizo is an excellent alternative to real chorizo, which is high in saturated fats, cholesterol, and calories. Soyrizo has no cholesterol, no gluten, and I can't really tell it apart from real chorizo. If you can't tell the difference, why not use the healthy alternative?


Wild Eggs

INGREDIENTS

  • 1 Pkg. Soyrizo makes 4 to 6 servings
  • 2 Eggs per serving
  • Salsa - Trader Joe's Salsa Especial is excellent
  • 2 Tortillas per serving
  • Hatch Green Chiles
  • Shredded cheddar or cotija cheese

PREPARATION

Remove casing from Soyrizo and brown over medium heat in a skillet. Mix in some salsa with the Soyrizo. Crack the eggs, one at a time, and lay on top of the Soyrizo/salsa mixture. Cover the skillet and cook until the eggs are over-easy or medium, about 10 minutes. While the eggs are cooking, warm tortillas, (microwave on high for 30 - 45 seconds or lightly pan fry). Place two tortillas on each plate and top with the egg and Soyrizo mixture, some cheese, more salsa, and the chopped green chiles.

Cooking time: 10 - 15 minutes
