Cucumber Bell Pepper Salad

  • 1 large cucumber, peeled and coarsely chopped
  • 1/2 red onion, thinly sliced and separated into circles
  • 1/2 red bell pepper, seeded and coarsely chopped
  • 2 tablespoons sugar
  • 1/4 cup rice vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flakes, crushed 
  • 1/4 cup fresh cilantro or basil, chopped
In medium shallow serving bowl, toss cucumber slices with onion and chopped red bell pepper. In a small bowl, combine remaining ingredients and mix well. Serve cold.
