Pappardelle With Spiced Meat Sauce

Pappardelle with spicy meat sauce


  • 2 Tsp. Olive oil
  • 1/2 Red Onion, finely chopped
  • 3/4 Lb. Lean ground beef
  • 1/4 Tsp Sea salt, plus to taste
  • 1/4 Tsp Fresh ground black pepper
  • 2 Cloves garlic
  • 1 1/2 Tsp Ground cumin
  • 1 1/2 Tsp Ancho powder - I was able to find chipotle chili powder, meaning smoked chiles that were dried and powdered
  • 1/2 Tsp Ground cinnamon
  • 1 1/2 Cups chopped jarred or boxed tomatoes, with juices
  • 1/4 Cup Dried currants
  • 8 Oz Pappardelle or fettuccine
  • 2 Oz Low-fat feta cheese, crumbled
  • 1/4 Cup Chopped mint leaves


  1. Bring a large pot of water to a boil
  2. While water comes to a boil, heat oil in a large skillet
  3. Add onion and saute for about 4 minutes or until soft
  4. Add ground beef, 1/4 Tsp pepper and saute until no longer pink, about 4 minutes
  5. Add garlic, cumin, chile powder and cinnamon and cook for about another minute, stirring constantly until fragrant
  6. Add tomatoes and bring to a simmer
  7. Reduce heat to medium-low and stir in currants
  8. Cook until sauce is slightly thickened and currants are plump, 2 to 4 minutes. Adjust seasoning.
  9. Add pasta to boiling water and cook until al dente. 
  10. Serve in bowls and top with sauce, feta, and mint.
