Lo Mein, Baby!

Ingredients

  • 10 ounces dry lo mein noodles 
  • 1/3 cup matchstick carrots 
  • 1/2 cup snow or snap peas
  • 2 medium skinless boneless chicken breasts, cut or slice as preferred
  • 2 Tbsp oil
  • 1/2 cup spinach
  • 3 garlic cloves, minced
  • 1/2 Tsp ginger, minced
  • 1 red bell pepper, cut into thin strips
  • Salt and black pepper, to taste
  • 2 green onions, chopped

For the sauce:

  • 1/4 cup dark soy sauce
  • 4 Tbsp oyster sauce
  • 1 Tsp hoisin sauce
  • 2 1/2 Tsp dark brown sugar
  • 2 Tsp of sesame oil
  • 1 1/2 Tbsp cornstarch
  • 1/2 Cup chicken broth

Instructions

  1. In a large bowl, whisk sauce ingredients together and set aside
  2. Cook the noodles according to package, Drain and set aside
  3. In a large non-stick saute pan/wok, heat 1 Tbsp oil over medium-high heat
  4. Season chicken and cook until browned on both sides - reserve on plate
  5. Add remaining oil to same pan/wok, saute the garlic and ginger quickly, then add peppers, carrots, spinach & snow peas, cook until tender
  6. Add noodles and chicken to the pan/wok 
  7. Pour in sauce and toss well - allow it to thicken over high-ish heat
  8. Plate the lo mein and garnish with green onions
