Chile Powder - 'Nuff Said
The Santa Cruz Chili and Spice Company chooses to use the New Mexico style of spelling the word "chile". I can't fault them for that because of their awesome product, but here's an article from the Los Angeles Times about the difference in spelling. Suffice it to say that "chile" is something that grows in the field and tastes wonderful when dried or stuffed. "Chili" is a dish, generally a stew, made with chiles and meat, that tastes wonderful no matter what you do with it. "Chile powder" is nothing more than dried chlies with some salt. Any mixture of chlie powder with cumin, corn starch, paprika, etc. is taco seasoning, chili fixin's, or something along those lines. Chile powder is the pure article.
