Cast Iron Steak

From Cook's Country

Place the cast iron pan you'll be using in a cold oven and heat it to at least 500ºF

While the pan is heating, salt both sides of the steak

Cooking the Steak

You will cook the steak for 7 to 8 minutes total

  1. Remove the heated pan from the oven and put it on medium-high heat
  2. Rinse salt from steak and dry very well
  3. Season the steak with pepper
  4. Pour about 2 Tbs of high heat oil in pan and let it just start smoking - just a couple of seconds
  5. Place the steak in the pan and time for 2 minutes
  6. Flip the steak and sear for another 2 minutes
  7. After 4 minutes of searing, reduce heat to medium-low and flip the steak again
  8. Sear for another 2 minutes and flip
  9. Sear for one last 2 minute stretch and check the temp - you wante 120ºF or so internal temp
  10. Remove steak to plate, tent loosely with foil and rest for 10 minutes
